My name's Emma, and I started PlantPlate in 2013 with the help of my husband Scott, a web developer and fellow plantivore. I’m a certified Plant-Based Nutritionist who loves to cook, and I've followed a plant-based diet for over a decade. Having lived in various locations throughout the world - sometimes on a shoestring budget, and often with irregular and demanding work schedules - I’ve had to constantly adapt my diet in order to make it work. It’s taught me a lot, and it’s motivated me to show others just how accessible and enjoyable this way of eating can be.

The recipes featured on PlantPlate are based on minimally processed plant foods, including fruits, vegetables, whole grains and legumes. They're free from all animal products, processed oils and refined carbohydrates, and are made with simple and affordable ingredients. Smoky Maple-Roasted Brussels Sprouts

Looking for a delicious way to serve up greens? These sweet, spicy, smoky and sticky brussels sprouts are a real show-stealing side dish!

Yield: Serves 3-4 as a side dish

Notes:

Sprouts are a must-have at our holiday meals, and this recipe has turned out to be a real winner! They make a great side for lunch or dinner, or you can even enjoy them as a tasty, healthy snack for between meal times.

There's some heat in these from the cayenne pepper, so if you're not into spicy things (or you're serving these up to kids) you can simply omit the cayenne or replace it with sweet paprika.

Instructions:

  1. Preheat oven to 200°C / 390°F. Line a large baking tray with baking paper. Trim the tough bottoms of the sprouts, remove any discoloured outer leaves, and slice in half lengthways.
  2. Add the sprouts to a large pan along with the vegetable stock. Sauté, stirring, over a medium heat for 6-7 minutes until most of the liquid has absorbed. Remove from the heat, add remaining ingredients, and stir to combine.
  3. Spread sprouts out in an even layer on the baking tray. Roast for 12-15 minutes until brown and slightly charred. Remove from oven and serve immediately.
