In the latest installment of our interview series, we chat to Will (a.k.a Potato Strong) about transitioning to a plant-based diet, the positive effect that it's had on his health, and how documenting his progress has motivated countless others to make the transition themselves.
As part of our interview series, we're speaking with people who have improved their health and lives by adopting a plant-based diet. In this installment, we chat with Will Kriski - a.k.a Potato Strong - about the benefits of becoming plant-based, how to ease the transition, and of course, what to eat!
Hi Will! Thanks for taking part in our interview series. To start with, can you tell us how long you've been eating plant-based?
I went plant-based on June 30, 2013 so over 2 years now.
What inspired you to make the change?
I watched Forks over Knives on Netflix. Because of animal ethics, I went vegetarian about 10 years ago, but never really focused on health. I’ve struggled with my weight over the years and my blood tests were showing high cholesterol and triglycerides.
So did this way of eating have a positive effect on your health and weight?
I lost 35 lbs of fat, lowered my cholesterol to 112 mg/dL, lowered my blood pressure from 145 systolic to 90 which has been incredible. I look and feel younger and have been inspired to take up some bodyweight exercises.
That's excellent! Did you face any personal challenges or difficulties while you were making the transition?
Before I did The Starch Solution (book by Dr John McDougall) I tried to eat a big plate of veggies and was starving. Once I started eating potatoes I was so full and happy all the time. Luckily my wife Bonnie came along for the ride and supported me. I think coming up with recipes you like takes some time, but I really enjoyed the process of tweaking recipes I made before - like pasta, pizza and tacos - without the oil and cheese.
What are some of your other favourite meals to make?
I really enjoy my baked fries, which are a fat loss staple of mine. I also like the cauliflower wings as they’re so tasty! I’m really enjoying Mexican food these days. Pizza has to be another highlight. What an amazing lifestyle!
Yes indeed! It's wonderful to be able to enjoy your favourite foods and improve your health at the same time. We see that your journey has been well documented through your website and YouTube channel. In what ways do you think this has helped others?
I get so many messages from people I’ve helped over the years, it’s what keeps me going. This could be from them enjoying my recipes, to converting their husband over, to getting better health results such as losing weight or reducing their medications. Seeing a guy do this encourages other guys as well! This way of eating is mostly adopted by women, which I hope to see change over time.
What advice would you give to others who are new to this way of eating?
Try to relax and enjoy the process. It helps to educate yourself by reading books, and watching documentaries and YouTube videos. Many questions I get are from those who don’t fully understand the concept of this way of eating yet, so being informed will help a lot. Use my recipes, or others such as PlantPlate's, or learn how to tweak your own favourite recipes by removing the animal products and oil.
Great tips will, thank you. Do you have any plans for the future with regards to Potato Strong?
Potato Strong is in somewhat of a maintenance mode as I tend to eat the same things over and over, but I do add a new recipe here and there over time. I just keep sharing my recipes, as well as interesting findings like new scientific studies, as well as do new YouTube videos. I just want to keep sharing the message and get more people to adopt a plant-based diet. I probably will do more videos on the animal rights and environmental aspects over time to expand the focus beyond just health and aesthetics.
